It is quick to cook, convenient, nutritional, and can be made in a one-cooker, and that’s all. This Indian favourite one-pot meal is known to feed both the body and soul and is truly finger-licking when served with ghee, papad, homemade pickle and curd.

3 One-Pot Masala Khichdi Recipes:

1. Chickpea Masala Khichdi

Ingredients To Cook Chickpea Masala Khichdi:

Ingredient Quantity
Rice ½ cup
Soaked chickpeas (or boiled) ½ cup
Moong dal ¼ cup
Onion (chopped) 1
Tomato (chopped) 1
Ginger-garlic paste 1 tsp
Cumin seeds 1 tsp
Turmeric ½ tsp
Garam masala 1 tsp
Salt To taste
Ghee 1 tbsp
Water 3 cups

Process to Cook Chickpea Masala Khichdi:

1. In a pressure cooker, add ghee.

2. Add cumin seeds along with sliced onions to brown them. Add ginger garlic paste and chopped tomatoes, and fry them.

3. Then add all the spices, chickpeas, rice, and dal.

4. Finally, add water and salt and pressure cook it for 3-4 whistles.

2. Masoor Dal Khichdi

Ingredients To Cook Masoor Dal Khichdi:

Ingredient Quantity
Rice ½ cup
Masoor dal ½ cup
Onion (chopped) 1
Tomato (chopped) 1
Green chilli (optional) 1
Cumin seeds 1 tsp
Turmeric ½ tsp
Coriander powder 1 tsp
Salt To taste
Oil or ghee 1 tbsp
Water 3 cups

Method of Preparation of Masoor Dal Khichdi:

1. Take oil/ghee in a pan; put cumin seeds; add onion and green chilli.

2. Put tomatoes in it and fry till mashed. Then add rice and dal.

3. Pour water and salt into it, and cook it in a pressure cooker for 2-3 whistles.

4. Make it a little mashed.

3. Paneer Masala Khichdi

Ingredients To Cook Paneer Masala Khichdi :

Ingredient Quantity
Rice ½ cup
Moong dal ¼ cup
Paneer (cubed) 100g
Onion (chopped) 1
Tomato (chopped) 1
Ginger paste 1 tsp
Cumin seeds 1 tsp
Turmeric ½ tsp
Pav bhaji masala or garam masala 1 tsp
Salt To taste
Butter or ghee 1 tbsp
Water 3 cups

Procedure to Make Paneer Masala Khichdi:

1. Take butter or ghee in a pan and heat. Add cumin seeds and sauté onions until translucent. Add ginger paste and tomatoes and stir well.

2. Add spices, diced paneer, rice, and dal. Pour water and salt into it and pressure cook for 2 to 3 whistles.

3. Gently stir it and serve warm with a dollop of ghee.
