  • 1 tsp Chana Dal
  • 1 sprig Curry Leaves
  • 2 Dry Red Chillies
  • 2-3 fresh Green Chillies - slit in half
  • 6-8 Cashew Nuts

  • 8-10 Peanuts
  • 1 tsp Turmeric Powder
  • Salt to taste
  • 1 medium Lemon Juice
  • 2 cups Kolum Rice
  • 4-5 Curry Leaves
  • A pinch of salt

How To Make A One-Pot Lemon Rice?

1. In a kadai, heat sesame oil and add mustard seeds, whole black gram, chana dal and let it get nutty brown.

2. Now add curry leaves, dry red chillies, green chillies, and saute for a minute.

3. Then add cashew nuts, peanuts, and saute until light golden brown.

4. Switch off the flames and add turmeric powder, salt, lemon juice and then toss in the rice.

5. Switch the flames back on and sprinkle some water on the rice, cover and cook for 2-3 minutes.

6. Remove the lid and crushed minutes of curry leaves and salt, mix it properly and serve warm.

The above-mentioned simple yet finger-licking recipe is straight out of celebrity chef Ranveer Brar’s kitchen. The good part is that lemon rice is a flavourful, tangy whole dish in itself. However, people often enjoy it with a bowl of Vegetable Raita or other cooling, crunchy papads, or spicy cooked potatoes as sides to balance its bright citrus flavours.

Here is an easy 5-minute vegetable raita recipe to enjoy with lemon rice:

Ingredients:

  • 1/2 cup raw, grated carrots
  • 1/2 cup each of diced cucumber, onions, tomato, capsicum
  • 2 cups Yoghurt (used Greek yoghurt for protein)
  • Use a few tablespoons of water or milk to adjust the consistency if needed
  • 1 teaspoon roasted cumin ground
  • salt to taste
  • 1/2 teaspoon black pepper

  • 1/2 teaspoon chaat masala
  • 1/2 teaspoon chilli flakes
  • 1/2 teaspoon garam masala
  • 2 chopped green chillies
  • 4 sprigs of cilantro
  • 5-7 fresh mint leaves
  • Pinch of sugar

Directions To Make Vegetable Raita

1. Add curd into the bowl, and add a few drops of water or milk.
2. Add dry spices as mentioned in the ingredients list and mix well.
3. Add in the veggies and give everything a good mix.
4. Refrigerate for some time and serve with lemon rice and papad.
