1. Classic Desi Masala Pasta Recipe

Ingredients:

Ingredient  Quantity 
Pasta  1 cup
Oil  2 teaspoon 
Onion  1 (sliced)
Cumin Seeds and Coriander Powder, red chilli powder 1 teaspoon 
Garam masala powder and turmeric powder 1/2 teaspoon 
Salt  to taste
Black pepper 1/4 teaspoon 
tomatoes 2 (chopped)
Fresh coriander leaves Handful of 

Method:

  • 1. Cook pasta with salt and oil until firm but not too soft or soggy.
  • 2. After the pasta is boiled, let it cool down, drain, and set aside.
  • 3. Heat oil in a pan, add cumin seeds, and let them sizzle.
  • 4. Add onion, saute until onion is translucent.
  • 5. Add chopped tomato, then add red chilli powder, coriander powder, garam masala, turmeric, salt, and pepper.
  • 6. Mix well and cook until the tomato turns soft.
  • 7. Add Tomato Sauce, soya sauce and a dash of water.
  • 8. Mix and cook for a minute.
  • 9. Add cooked pasta, toss, and coat with sauce.
  • 7. Now, transfer the pasta to the plate. Add a slice of bread and garnish with chopped coriander leaves.
  • 8. Voila, your pasta is ready to serve hot and enjoy.

2. White Sauce Masala Pasta Recipe

Ingredients:

Ingredient  Quantity 
Pasta 1 cup
Cashews  6-10 (soaked in advance)
Onion 1 (chopped)
Garlic  2 cloves
Ginger  ½ inch (minced)
Tomatoes  2 (chopped)
Cumin powder and coriander powder 1 tsp 
Garam masala, red chilli powder and turmeric powder ½ tsp 
Kasoori methi (optional) 1 tsp 

Spinach

a handful of 

Method:

1. Cook the pasta in hot salted water with a little oil until it is firm, but not too soft.
2. When cooked, let the pasta rest and drain the water. Set it aside.
3. Heat some oil in a pan. Add the cumin seeds and fry until they splutter.
4. Add the onions and fry them until they turn translucent.
5. Now add the chopped tomatoes and spices such as red chilli powder, coriander powder, garam masala, turmeric, salt, and pepper.
6. Mix everything and cook until the tomatoes soften.
7. Now add the Tomato Sauce, soy sauce, and some water.
8. Mix again and let it cook for a minute.
9. Add the cooked pasta and stir and mix it with this.
10. Serve the pasta on a plate. Put some bread on top and garnish it with some chopped coriander leaves.
11. The pasta is now ready to be served.

3. Veggie-Loaded Masala Pasta Recipe

Ingredients:

Ingredient  Quantity 
Pasta 1 cup
Olive oil 2 tsp
Yellow, orange and green bell pepper, zucchini and squash 1/4 cup each (chopped) 
Salt to taste
Broccoli florets  1/4 cup (steamed)
Boiled corn  1/4 cup (steamed)
Butter 2 tbsp 
Wheat flour 1 1/2 tbsp 
Whole milk 1 1/2 cup 
chilli flakes, oregano and Italian seasoning 1/4 tsp each 
Basil leaves 7-8 fresh 
Black pepper 1/8 tsp 
Cheese 2 cubes 
Cherry tomatoes 12-14 halved

Method:

1. Cook pasta in boiling water, adding some salt and oil. Cook the pasta until it becomes firm but not soggy.
2. Once the pasta is ready, allow it to cool down, strain and keep it aside.
3. In the same pan, on medium flame, put olive oil.
4. Cook all vegetables, pepper, salt, broccoli, and corn together. Stir well.
6. Next, move cooked vegetables to the plate.
7. In the same pan, put butter on a medium flame.
8. Put wheat flour and stir.
9. Stir continuously while cooking to avoid the formation of knots and milk for one minute.
10. Reduce the heat and cook for 7-8 minutes on low heat till mixture thickens.
11. Sprinkle some chilli flakes and oregano along with Italian seasonings.
12. Add basil leaves, salt, and pepper.

13. Add grated cheese. Stir.
14. Next, add cooked veggies into the mixture.
15. Add chopped cherry tomatoes and cooked pasta along with 1/3 cup of pasta water.
16. Cover and cook for five minutes.
17. Garnish with basil leaves and serve with toast.
