One-pot sambar rice recipe is perfect for office lunch because it is easy-to-cook and nutritious, veggie-packed and also won't make you feel sleepy or heavy. Additionally, the recipe has a soft consistency, needs no side dishes to pack, and reheats really well in an office microwave.

Ingredients You'll Need For One-Pot Sambar Rice:

Ingredient

Sesame oil

1 tablespoon

Mustard seeds (rai)

1/2 teaspoon

Fenugreek seeds (methi)

1/2 teaspoon

Curry leaves

1 sprig

Asafoetida (hing)

1 pinch

Sambar onions

30 (Peeled) 

Tomatoes

2 (Finely chopped) 

Turmeric powder

1/2 teaspoon

Sambar powder

½ teaspoons

Salt

½ teaspoons

Cinnamon powder

1 pinch

Chow chow (chayote)

½ cup (chopped)

Capsicum

1/2 cup (chopped)

Tamarind

2 teaspoons (soaked in water) 

Toor dal

½ cup (Soaked for 15 minutes) 

Rice

½  cup (Soaked for 15 minutes) 

For Tadka / tempering Sambar Rice:

Ingredient

Quantity 

Ghee

1 tablespoon

Cumin seeds

1/2 teaspoon

Hing (asafoetida)

1 pinch

Kashmiri chilli powder

1 teaspoon

Coriander leaves

1 tablespoon

Curry leaves

1 sprig

Step-By-Step One-Pot Sambar Rice Recipe:

Step 1: Heat 2 tsp oil in a pressure cooker

Step 2: Add mustard seeds and fenugreek seeds. As soon as they begin to splutter, add hing, curry leaves, and saute them for a few seconds on low flame

Step 3: Add onions, tomatoes, turmeric, sambar and cinnamon powders, and also salt to it and saute it for a few seconds on low flame and then add 2 cups of water and bring it to a boil.

Step 4: Add chow chow and capsicum, along with strained tamarind and also add the tamarind water and discard the pulp.

Step 5: Add dal, rice, 1 and a half cups of water and 1 tsp oil and mix well.

Step 6: Put the lid on it and pressure cook it for 10 minutes on low flame from the first whistle and let it depressurise itself. Open the lid and mix well.

Step 7: For tempering, heat ghee in a tadka pan, add cumin seeds, and as soon as they splutter, add hing, kashmiri chilli powder, coriander leaves and curry leaves and stir it for a few seconds and pour the tadka over the sambar rice.

What To Serve With Sambar Rice:

You can serve crunchy potato fry, banana chips or papadums with sambar rice for that extra contrast to the softness of the rice. You can also pair the dish with refreshing cucumber raita or simply plain yoghurt to neutralise the spiciness.

Storage And Lunch Box Tips:

Pack the rice slightly loose, since it thickens when it cools. Add a little warm water to the dish before sealing it in the box.
