Ingredients To Make One-Pot Paneer Rice Recipe:
Recipe For 1 serving
- 100g Paneer (preferably low-fat) (diced)
- 100g Boiled white rice
- A finely chopped onion
- A finely chopped tomato
- A finely chopped green chilli
- A finely chopped coriander for garnishing
- A tsp of turmeric powder
- 1 tsp of cumin seeds
- 3-4 finely chopped garlic cloves (optional)
- Salt to taste
One-Pot Paneer Rice Recipe
- Step 1. In a pan, heat the oil and add cumin seeds and garlic cloves and let them splutter.
- Step 2. Now add the onion and stir. After the onion turns translucent, add the tomato and green chilli.
- Step 3. As the tomato starts to cook, add turmeric powder and salt to taste. Mix well.
- Step 4. Add paneer and cook for 2-3 minutes.
- Step 5. Now add boiled rice.
- Step 6. Give everything a good stir.
- Step 7. Cook for a minute and turn off the gas.
- Step 8. Transfer the paneer rice to your office lunch box and garnish with coriander.

Cucumber Raita Recipe:
Ingredients:
- 1 large cucumber
- 1 Cup of curd (Dahi)
- Handful of mint leaves, chopped
- 1/2 tsp red chilli powder
- 1/2 tsp cumin powder
- Salt to taste
- Coriander leaves, chopped
- Pomegranate pearls
- 1 tsp ghee
- 1/2 tsp mustard seeds
- Pinch of asafetida
- dried red chilli
Method:
1. Peel off the cucumber and grate it.
2. In a bowl, add curd and mix cucumber, mint leaves, chilli powder, cumin powder, salt, coriander leaves, and pomegranate pearls.
3. Give everything a good mix.
4. Now, in a small pan, heat ghee and add mustard seeds, asafetida and dried red chilli.
5. Once they crackle, mix it in the prepared raita.
6. Serve this cucumber raita chilled with the paneer rice recipe.
