Soya Chunk Salad Recipe:  Who said salads are boring? Try this finger-licking soya chunk recipe, and it will become your breakfast staple. In a health-conscious, fast-paced world, people prefer quick-to-prepare, protein-rich options, which are easy to digest and also good in taste. As per the National Institutes of Health report, Soya chunks are packed with essential proteins and veggie-loaded salad, making it a perfect pick for healthy breakfasts.

Ingredients

For Cooking Soya Chunks:

- 1 teaspoon olive oil or desi ghee

- 1 cup soya chunk

- 1 tablespoon Schezwan sauce

For Dressing:

- 1 tablespoon Greek yoghurt

- 1 tablespoon peanut butter

- Salt to taste

- 1 teaspoon lemon juice

- Olive Oil

- 2-3 chopped garlic cloves

For Vegetable Base:

- half cup sweet corn (boiled)

- You will need 4 leaves of lettuce

- cucumber (chopped)

- cherry tomatoes (half cut)

- Spinach (as much as you like), chopped

Method:

1. Take a pan, heat olive oil or desi ghee as per your choice.

2. Sauté boiled and squeezed dry soya chunks. Add salt and Schezwan sauce. Mix well and turn off the flame once the chunks start turning golden.

3. For salad dressing, take a big bowl, add yoghurt, schezwan sauce, peanut butter, lemon juice, olive oil, and chopped garlic in it.

4. Mix everything well together using a spoon for a smooth dressing. You can also add a little water if you want.

3. Now, to prepare the salad bowl, first add finely chopped vegetables like lettuce, spinach, cucumber, boiled sweet corns and cherry tomatoes. Now pour in your cooked soya chunks.

4. Lastly, add your tangy yet flavourful creamy dressing.

5. Give everything a gentle mix and enjoy fresh soya chunk salad.
