Khaman Dhokla Recipe:  Khaman Dhokla is a world-famous Gujarati snack. From breakfast to evening snack, the dish is widely loved across India. Are you also craving the irresistible taste of the quintessentially soft and spongy Khaman Dhokla along with the taste of the tempering and the burst of flavours in your mouth? Well, we have got you covered. Here is an easy and scrumptious recipe to make homemade Khaman Dhokla, straight from the kitchen of celebrity chef Sanjeev Kapoor.

Ingredients:

  • 2 cups of gram flour

  • Oil for greasing

  • Salt to taste

  • 1 cup yoghurt

  • 2 teaspoons ginger-green chilli paste

  • 2 teaspoons fruit salt

  • Green chutney to serve

Tempering:

  • 2 tablespoons oil

  • 1 teaspoon mustard seeds

  • 1½ teaspoon asafoetida (hing)

  • 1 tablespoon white sesame seeds

  • 10-12 curry leaves

  • 2-3 green chillies, slit

  • 2 teaspoons sugar

  • Chopped fresh coriander leaves for sprinkling

Method:

  1. Grease an aluminium tin with some oil.

  2. In a big bowl, take the gram flour and mix it well with salt, yoghurt, and ginger-chilli paste.

  3. Add 1 cup of water to it and whisk well to form a smooth mixture.

  4. Add the fruit salt, a tablespoon of water, and mix well.

  5. Pour the batter into the greased aluminium tin provided for baking.

  6. Heat sufficient water in a steamer. Insert the baking tin into a basket in a steamer, close it, and steam for 10 to 15 minutes.

  7. Remove the heat from the gas burner and take out the baking tin from the steamer. The dhokla can be cooled slightly. Cut the dhokla into squares.

  8. Heat oil in a small non-stick pan, add mustard seeds, let the mustard seeds splutter, add asafoetida, white sesame seeds, curry leaves, and green chillies, mix well, add half a cup of water, mix it well, add sugar, mix it, and cook on low heat till the mixture boils with sugar dissolved.

  • Finally, evenly pour tempered seasoning over the prepared dhokla.

  • Garnish with some coriander leaves and keep aside for 5 minutes. Serve with green mint chutney.
